Cover in chili powders, curry powder, oregano and salt. Roast at 425 for 20 min

425 for 20 minutes to cook thighs to medium rare? I do thighs at 400 for nearly an hour before they're done. 180F internal temperature.

Looks like it's raw inside. Very bad for you. You have to cook meat slower at lower temperatures.

I would have suggested that AT almost half The heat after browning, and a little longer in oven. That would just melt in your mouth.
