Everybody beats goku at least once, Goku has the plot device called Zenkai boost that gives him a power boost after getting his ass whupped. Goku is a model of willpower and focus, he isn't unbeatable, he will just come back and fuck you up after you beat his ass.
Goku has, canonically, at full current power, been defeated by 3 different opponents (Jiren, Broly, Vegeta) and has expressed a view that he would lose to 1 opponent he hasn't fought at his currently level (Beerus).
List of people who beat Goku, Roshi, Tien, Piccolo (kill's a kill), Android 19, High Cholesterol, Majin Vegeta even though Goku held back (win's a win). And that's just the first two series
And there's even more if you count times tricked. It's the reason why Superman would win in a Superman vs Goku fight, like yeah comparatively Goku is way stronger, but Sups would outwit Goku and manage to come away with the W. And I say that as a diehard fan of Dragonball.

Vegeta also crushed Goku into a paraplegic in their first fight, since it took Yajirobe/Krillin/Gohan to finish it.

Actually a canonical reason why he wins in the end. Toriyama added a bit of lore that says saiyans get a huge power boost everytime they're beaten to the brink of death. So that's why he can come back and beat opponents after they've absolutely rocked his shit.
Yep, that's been established not all that long after the Saiyans first arrived. In fact, when Goku was in the first capsule corp spaceship in the way to Namek, he actively used that to train himself to almost death in enhanced gravity and restore himself with a senzu bean. Almost actually killed himself a couple times, and by the time he got to Namek he was basically living full-time in 100x gravity.
