but a reverse sear is when you cook it at low temperature then sear it, as it's the reverse of the norm (at the time) of searing then finishing!

It's like sous-vide but in an oven with a decent thermostat instead of messing around with a water bath and vacuum sealing and a specialized tool.

In other words, it's like sous-vide but different in almost every way.

Instead of searing first over high heat, you cook low and slow (in a smoker, usually), let them rest for 5-10min, and then sear in a pan

Oh man that reminds me of the time my dog got loose right after I adopted him and I was trying to lure him back with a hot dog and he literally snatched it from my hand and inhaled it while running away from me. He was a very naughty boy but he has learned much better manners now.
