The models are actually different scale. The big one is 1/60 scale, the red one is 1/100, and the smallest is 1/144 scale.

Not always. The ones in Mobile Fighter G Gundam (really catchy title) are pretty small.

Also, those two kits are completely different scale, the Unicorn is 1/60 and the RX-78-2 is 1/144.

Not really, it depends on the series and even in some cases, some MS will be bigger than others. It really just depends on the MS itself.
