I'm always amazed at how cheap cockpits look (as in: badly fitting covers, almost Eastern-Block looking plastics), consering their pricetag.

For the panel gaps at least, those aren't really covers but entire modules that can be popped out and back in for easy servicing, so they're not going to have a seamless dash like a car which are a huge pain to dismantle and reassemble. As far as materials go I'd guess it has to do with the fact that they're designed for very long service lives (50 years or so) without degrading too much
