Bottled my current round of mead. It was 15% before racking into the secondary. Below are the flavors.

Left to right.
1st Row Pineapple
2nd & 3rd Row Peach
4th & 5th Row Butterfly Pea Flowers/BlackBerry/Cinnamon Stick
6th & 7th Row Raspberry
8th & 9th Row Blueberry
10th & 11th Row Strawberry

The mixture didn't turn out the blue color I was looking for but it's still a cool color. The taste of the BlackBerries comes through though. I get a bit of the cinnamon as well. I'm just glad I didn't add more cinnamon it would have been overpowered. I can't wait to try this one in a few months.

You could taste the peach but the most flavorful was the raspberry. My wife could instantly tell that it was raspberry.

Not sure if the same with mead as wine, but when I made it if it tasted crap when you drank it, just leave it. Sometimes they really mature

I had some from my 1st batch that I had to leave for almost a year. It went from crap to amazing.

Once you get the base down you can play around from there. Secondary is where I add all my flavors.

For a gallon of mead it's basically 3-4 lbs of honey, water and yeast. The main thing you need is time for mead.

No problem! It's definitely not as hard as it looks. You might mess up during your first batch, but it's well worth it.
