Cast iron pan pizza is easy

10 inch cast iron pan makes a decent pizza with store bought dough.

If you have a Hy Vee they have frozen dough next to the frozen garlic bread in many flavors. Trader Joe's sells fresh pizza dough and it is awesome. In the open cooler with the cheese and packaged sliced meats.

This is a ball of frozen dough. You take it out and thaw in the fridge the day before. A full ball Would be great for a 12 inch cast pan or rolled out on a sheet pan. The cast pan is not really needed because you can make it any way you want.

I split it into two balls for two 10 inch cast pan pizzas. Tear and form into two balls making sure to sort of roll it on itself to even out the tear so you do not get a strange edge when you roll it out

I use a fork to dock the dough in the middle and around the edge so bubbles are reduced.

Olive oil in the cast for a crispy crust. Like Pizza hut does. I do not thing Pizza Hut uses olive oil, but they squirt oil before the put the dough disc in so it crisps up. This is what I am going for.

I mix a bit of regular mozz in with the fresh mozz. The fresh has a lot of moisture in it, but it usually boils off since the oven is at 500 F

A lil flavor is always good. I let the dough rise a bit in the oiled pan before adding sauce and toppings.

Optional, but if you want a crisper crust you can start the pan on a stove. It gets the pan hot and sort of sets the crust. I go till the oil just starts to bubble on the edges on medium. less than 5 minutes.

Into the oven at 500 on a middle shelf and keep an eye out for bubbles in the first 5 minutes and then again at the end. Just poke with something and they will deflate.

It really was a cat tax. I pitched it and started over. I am not CATching that one cat disease.

Get a good one, season it yourself, don’t believe the box. It will last lifetimes. My favorite is cornbread pan that was my great grandmas.
