It definitely is. Direct contact with the hot pan plus steaming during the bread phase. It's also 1/4 inch thick so was probably done 45-60 seconds after the flip

Was going to say something similar. That meat would take quite a lot longer to cook then the egg and you can only cook 1 side of the meat with that order.

I'd be rather concerned about the meat in contact with the egg being undercooked.

The egg holds the sausage together so it doesn't go everywhere and the extended cooking time makes it food safe. The egg gets a little overcooked but the alternative is a less cohesive biscuit.

I've never encountered sausage that had trouble holding itself together. I think this would work just fine with a pre-cooked sausage patty.

I have, it depends on the type of sausage. And I would assume that the person making this food professionally knows the best way to do it, rather than a bunch of commenters. These processes are usually born of trial and error and the best method sticks.
