The ear cropping is just for show. It serves no actual purpose and in fact hinders their ability to communicate with other dogs.

My cousin always opts to clean his Dane’s ears every other day rather than crop and no infections yet (6 years old)

In working dogs specifically, more commonly hunting dogs, it prevents injuries to the ear that can rip or sever the ear. In all other /1
Some people think it lowers the chance of ear infections but it's never been proven- in fact it allows debris into the ear.
