Look at the ingredients on regular chorizo. Lymph nodes and salivary glands are the top 2 ingredients. I love meat, but soy is ok for this.

They're both good. Slightly different texture (I think soy is better) slightly different flavor profile (I think meat is better).

I'm not big on gristle. I find most chorizo have chunks of gristle and it ruins the experience. Soyrizo gives you flavor and no gristle.

Yeah, just not quite as good flavor imo. Also, the trick for chorizo is cook it way longer than you think. Reduce, then crisp.
