As italian, this is how you make a real tiramisù

Make italian coffee and let it cool down. Then whisk together egg yolks and sugar.

Add mascarpone and stir

Beat eggs whites until fluffy and add them gently to the mascarpone mixture.

Build a layer of dipped savoiardi across the bottom of the pan. Spoon a layer of egg/mascarpone mixture across the layer of savoiardi

Sift cocoa on top and repeat the procedure at least another time.

At the end add some chocolate if you like it.

you dip the savoiardi biscuit in it and the coffee is soaked up by the biscuit, then it is soft, not crunchy when the tiramisu is complete
