I cut up the meat about pinky fingernail sized. I also tend to use some pork or lamb in addition or instead of beef. Brown it in the spices.

Yeah I saute the veggies first with the seasoning. Then I add the meat. Then I add tomato puree, diced tomatoes, and beans. One pot!
