I decided to try something I suggested in that post. Like the pork chop recipe, the sausage was cooked on a bed of potatoes and onions. Before being placed on the oiled cooking sheets, they were tossed in melted butter and seasoned with Morton’s Season All, Kinder’s Garlic & Herb, and parsley. I also added some grated smoked pepper goat cheese.

Three kinds of sausages were used:
1. Kiolbassa Roasted Garlic
2. Holmes Pecan Smoked
3. homemade all-beef Louisiana hot sausage

VERDICT: everybody at the table had seconds, even the person who said they preferred my original pork chop version. So this is a winner, and will enter the rotation.

Brocoli and onions with olive oil and salt is a great side if prepared like this.

Looks good! I thought about doing it like that in a big pan on my stovetop, but wanted to test the oven method out.

I prepped the sheets with a sheen of olive oil. There were a couple (over) caramelized onions that stuck in the corners, but nowhere else.

That there is called "lazy man casserole". Carrots are a nice addition.

That’s a good idea! This could DEFINITELY gracefully accept topping with a brown gravy.

Did the potatoes cook enough? No parboiling?

They were cut in nice medallions- big surface area and only a cm or so thick- and they were plenty tender.

I'm going to say, if you don't like spicy, then bell peppers, but if you do like spicy, make half a tray with jalapenos.

That was one of the dinner table discussions about the meal. Peppers would be KILLER in something like this, but my Mom has problems with bell peppers and can’t handle spicy food anymore.

However, we recently discovered she can handle Hatch, Poblano and Anaheims, so maybe next time.
