Roasted Eggplant, roasted squash, double chuck roast
Got this for 60 dollars on Amazon. Had the points and pulled the trigger. Thanks daddy Bezos. Smokai tube rear right, under shelf, caster leg upgrades, and a little holder for stuff.
Fun fact. Almost every traeger hopper gets damaged in transit. God damned waste of a weekend.
I did a not horrible job of mounting the smokai, which burns cleaner and longer than an external pig smoker.

We get em to 130. Thought my stall would be much higher, but I was running out of time.
So this is when I double them up and wrap. My initial wrap had too much paper. Worked as an insulator and I wasn’t getting and heat to the meat. Say it again. You want heat to the meat.
So here we’re letting the smoke tube and water pans burn off. Got my dual probes.
Your bbq probe may not match your other probe. I don’t rely on the traeger probe. It’s too high.
So we let it go till it hits 210 and we take it off

These gloves let me work for a few seconds in high heat. If you get them wet you might deglove your hand.
These are for when I have to grab my hot greasy meat or open my car radiator.
I’m a 1/2 stack of coals kind of guy. With No slow n sear ran though coals A LOT faster than normal, and I had a full chimney.
I drilled this out and use a banjo burner to start my coals in like 30 seconds. We are not the same.
