Half finished.

When I say “this cake”, I mean this particular recipe. I came up with it by chance a few years ago.

It’s a jazzed up Duncan Heinz yellow cake. I did a common substitution of milk for water, and added some almond extract.

The filling between the layers is Fischer & Wieser Amaretto Peach Pecan preserves, with some extra crushed pecans mixed in for stability, flavor & texture.

The frosting was homemade buttercream* with some maraschino cherry juice added for a hint of pink color.

Finally, I topped the cake with cherries & more pecan.

Overall, it was a very tasty cake. But there WAS one anomaly. For some reason, a large bubble formed in the middle of the cake. I discovered this when I cut it in half so I’d have 2 layers & a place for the preserves. So the bottom layer was almost like a bundt cake, while the top formed a dome over the void.

I’ve never seen anything like this happen before, so I have no explanation for why it occurred.

* due to a tragic kitchen accident, 1/3 of it wound up on the floor.☹️

My mom made something like this long ago. I ordered a cake from Wal-Mart, but that looks amazing. I went to make a cake last week and something went wrong. Plan on making ice cream tonight tho.

Fortunately, no. Our old grrrl was in the yard when it happened.

I had put the leftover buttercream frosting into a plastic, lidded container for freezing. I was trying to put some plastic wrap contacting it, too, so none would be directly exposed to the air. But the plastic wrap refused to cut or tear properly.

In my struggles to separate a piece of the wrap from the roll, I knocked the container off of the counter, spilling a bunch of it.
