Finnished product.
Ingredients
Combine and chill for 30 minutes.
8oz. Softened Cream Cheese
⅓ C. Powdered Sugar
1 tsp. Vanilla extract
#40 portion scoop onto a sheet pan and freeze several hours till solid. Note: This was a test bake to prove a cocept/technique. You may have to bump these ingredients up a little. I ended up wit 12 muffins but only 10 centers.
Scoop. 1 #16 portion scoop of batter into every other well of your muffin tin... Then, set a frozen center into each well. Gently settle it down into the middle, but not so far that it touches the bottom. It must be surrounded in batter.
Top with another scoop of batter. May need to fuss with the top scoop of batter to get it to completely cover the cream cheese but a butter knife gets the job done.
Bake at 425⁰F for 7 minutes. Then, reduce the temp to 350⁰F for 24-26 minutes or, until a toothpick comes out clean. (Cream Cheese center will be soft so test the edge to judge the muffin doneness.)
Cool 10 minutes in the pan... Remove to a cooling rack to cool completely.
