I don't have an engine powered bike. How does one lose control in a way that causes the bike to accelerate?

Whiskey throttle. You lose balance, panic gaining balance and you're death gripping it while getting thrown back trying to hold on and not fall.

I've never driven a motorcycle, but from my experience sim racing, sometimes throttle is the right thing to do when you lose control. It takes a lot of experience to figure out when that's appropriate.
I also know that dirtbikers need to use a lot of throttle control while in mid-air in order to control their pitch, due to the angular momentum involved. Hitting the throttle makes you pitch up (back flip) while hitting the brakes makes you pitch down (front flip).

It's perspective. You're probably not skilled at off road biking, so it ALL looks dangerous to you. To a hobbyist or professional it's a more subtle calculation
