Home Made Fettuccine - A proper Post

Jan 18, 2026 4:47 PM

Made this the other day and just quickly threw up the original post, but I wanted to include the recipe and a pic of the final product. Fettuccine w/ meatballs. Topped with hand grated parmesan. It came out pretty well.

Pasta dough:
3 Cups (400g.) Flour
4 eggs
1 Tbsp. Olive Oil
A splash of water (if the dough is still a little dry.)

Beat the eggs, oil and salt together. (Having a KitchenAide makes this easy) Add in the flour a little at a time and let the mixer do the work until the dough is smooth. Afterward, I kneaned the dough a little by hand for good measure.
Divide the dough into 4 equal pieces.

Using my trusty hand-cranked pasta machine, rolled out the lightly floured dough fom setting 7 down to setting 2, and then ran the dough through the cutter to make fettuccine.
Laid the pasta out on ths tray to dry just a bit. Cooked it in boiling salted water for 2 to 3 minutes...
