Except Occam's Razor has nothing to do with simplicity, it has to do with the number of assumptions you have to make in order to arrive at a conclusion. A solution can be complex but have zero assumptions or "guesses" in it and be the preferred answer over a significantly more simplified solution that makes numerous assumptions and Occam's Razor would tell you to choice the more complex solution.

The point is that the more unknowns you have the more likely you are to make a mistake, so a solution with zero or few unknowns is less likely to be mistaken than one with multiple unknowns hence why the razor is concerned with "assumptions".
