Ok, so, I was making chili (See a previous post for pics ) and these *were supposed to be* corn muffins augmented with cheddar cheese and chopped jalapenos.... Well, due to a mistake or a miscommunication I ended up with Jiffy Buttermilk Biscuit Mix instead of Corn Muffin Mix and chopped green chilies instead of jalapenos.... For those who don't know, Jiffy mixes are fairly popular here in the U.S. and they're pretty handy in a pinch.
Anyway, I went with it and wasn't disappointed.
3 little boxes of Buttermilk Biscuit Mix
8oz block of cheddar cheese, shredded
4oz can of chipped green chilies, drained well
½ cup of cold water (x3 for a total of 1½ cups)
Mixed it all together until the dry ingredients were no longer visible. Cheese, chilies and all. Let it rest for a few minutes while the oven heated up to 450⁰F.
Portioned out with a #8 scoop, so I guess they're drop biscuits, and into the oven for 17 minutes (they were large, as you can see) Made 9 in total but had to try one to see how they were. Light, fluffy, savory...

I have a recipe for jiffy mix. It's mix it with whatever and then cook it however, or don't and just eat it directly from the box. Either way put butter on it, it's fucking amazing.
