"Taco Rice" (Asian blended take on an Okinawa takeout special

In Okinawa you could get a takeout dish called Taco Rice . Bed of rice , savory beef mince and a Sriracha like hot sauce drizzled on top... The perfect after drinks food . I've been messing around with different versions trying to trigger the sense memory. This is a deviation but somewhat a new dish while still being an homage.

The beef was cooked with fermented garlic minced, fermented white onion, homemade sambal (fermented) and lots of fermented black bean sauce (the chunky Chinese style not the smooth Korean style) as well as some taco seasoning.

I recently tried Nongshim's black bean sauce ramen packet which gave me the idea

Also added to the mince: mushroom dark soy sauce, oyster sauce, Chinese black vinegar (Chinkiang style), salsa matcha/chili crisp oil, whites of green onions, as well as a bit of spicy szechuan sauce . Just a bit of salt and msg. I cooked of the first few ingredients on bacon grease before adding the ground beef (on sale ?)

I pureed the stems of three bunches of cilantro and used that and the remaining necessary water to cook the 'sushi' rice with a lemongrass bundle on top and 2-3 frozen cubes of homemade chicken stock, finished with rice vinegar as it cooled.

Layered the rice, then a thin layer of shredded wet mozz, then the black bean sauce 'taco' meat then topped with dices cilantro, green onion tops and crispy fries onion pieces.
