Final product. Half batch each, White cake mix and blueberry pie filling and White cake mix with strawberry pie filling.
Back row: Streusel (Crumble) topping on all 6.
Middle row: Sprinkled with sugar (All 6.) Blueberry has grated lemon zest on top as well
Front row: Sugar Sprinkle AND Lemon zest on both.

Batters after resting in the fridge for 30 mn.

Lemon zest is lemoney.
Liners in the pan.
Unbaked. Topping listed above. To fill the wells, I use a #16 portion scoop twice in each well.
Baked at 425⁰F for 7 minutes. Then, the temp is reduced to 350⁰F for 26minutes
Cool in the pan for 10 minutes. Then, remove to a cooling rack ro cool completely.

They look gorgeous, and delicious. I don't try baking anymore; I know from experience that if I tried this recipe they would look like Dr Frankenstein's early discards, and taste like the sand in the mummy's sarcophagus.
(Fortunately, I live very close to an excellent panadería, and I have a friend who loves to experiment with baking. I'm sure that if I show this to him, cupcakes will appear.)

Surprisingly the fruit holds up and comes through in the final product very nicely. They're really good.
