Made a brine that I never tried before with ginger root, but hole cloves, oranges and bay leaves.

I brined this 19lbs bad boy for 24 hours!

I woke up at 04:30 to get this on by 5. I then went back to bed. Thankfully, baby spice allowed me to sleep in and he didn’t wake up till close to 8!

Here it is after 4 hours. This was bad because in years past the Traeger wasn’t working well. I cleaned out the augur and fire pot over the summer and now it is more efficient.

I let it stay in a “keep warm” setting for close to an hour to prolong the cooking and got it down and then injected it one more time with butter and cooked the skin!

I placed the carcass in the garage refrigerator so I can make turkey dumpling soup. My dog would not leave me alone and made sure to get some of the drippings as I was trying to get it to the refrigerator.

BBQ'd one once on a Weber on the front lawn. Separated the coals into 2 rows on the bottom, and added 12 briquttes every 1/2 hr to maintain temp. Delicious.

Oh! That’s a Traeger grill/smoker. Since it is mostly a grill I needed more smoke so those are smoking tubes. You put in pellets into the tube, put in a fire starter square and light it and it gets the pellets going.

I wouldn’t enjoy my parents being together anywhere, especially my house because they’ve been insanely awkward and avoidant of each other since the divorce. I hate playing messenger between two adults that were married for over 20 years and should be capable of communicating with each other.

A pit-boss combo pellet smoker/grill, so the smoker doesn't have the biggest size, but its big enough for a majority of things

I spatchcocked it and smoked it for about 9 hours. My smoker is also a grill so the smoker isn’t great so I added smoking tubes and lit them to add more smoke. I used a fire starter square to help get the pellets in the tubes going
