that they are dangerous and not for eating, or the reptiles stomach acids will neutralize the poison - not sure which though

Stomach, or if they survive past the stomach into the intestine they will likely be absorbed into the blood at that point. Hence why (2)

I struggle to even get mine to poop. He'll sometimes go 2 weeks without pooping and my vet says he's perfectly healthy. He's about 2 yrs old

Snake venom is basically snake saliva, and it is a deadly venom to snakes of the same species, but they swallow it all the time just fine.
