I can't remember the last time I had something from McDonald's; I think it's been at least three years at this point. They lost sight of being a burger joint, much like other fast food places.

I like blood sausage. In the Netherlands we have Bloedworst and Balkenbrij. Mainly in the southern part. They ysed to slaughter a pig every year on farms, 60 years ago and before, and every part of the pig was used. Balkenbrij uses buckwheat flour and cloves and a lot of other herbs and spices.

The salted pig fat is called "sala". I used to eat it as a kid in Ukraine. We kept it chilled in the fridge and you just cut a piece off and put it on some "black" bread (sorry dont know the English equivalent for the bread name). It was delicious! But, perhaps related, I now don't eat any pork products and haven't for decades.

The salted pig fat is pretty much what it says: slabs of back or belly fat brined (either wet or dry) for a few days, then seasoned and lightly smoked. It's like having bacon that's just the fat, no meat. Goes well with onion and mustard

You can cook it, it's usually eaten as is. If you cook it long enough it becomes crunchy but not burnt. We also eat it in romania (probably the balkans too), we eat head cheese too. So the graph kinda implies that tripe soup is more horrific than pig fat and head cheese is more horrific than tripe soup.
