“You want me to put my hand where? And do WHAT?”
CyanideBreathMint
I recommend spatchcocking it, if you didn’t already plan to.
MidoryMoon
Yes, this is an excellent idea.

Fully submerge that thing! Add some containers filled with water to take up the empty space and not dilute the brine. Then something to weigh it down to stay in the brine.
SuperfluousMeh
He's fully submerged now. This is the glamor shot.

Okay so I’m gonna go out on a limb and say, good effort. A for the enthusiasm, but we need to level up fast. That bird needs to be in a bag. I dry brine poultry every day of the week. Way safer, way less mess, better results. No water log. Kenji (who is a bit smug) and meathead goldwin (amazingribs.com) have both talked about this. You’re messing with the culinary equivalent of antimatter. You need to spray everything with 10% bleach solution when you’re done. The water doesn’t make the bird/
DanielAsparagus
You also need another 20 lbs of ice. 35 is no dice for me, homie. One day? No big deal. For turkey? You’re asking for the antichrist if you are an hour past 48.
DanielAsparagus
and those aromatics won’t make a diff. It’s like brewing tea in ice water. I’ve done all of this and respect the hell out of the effort, but for all of my work these days I spatchcock and dry brine, then do a cook with a good digital probe that stays in the bird.
b00guy
Remember to take out the giblets, my dad didn't the first time he cooked one.
He spent all day wondering why he couldn't get much stuffing into the bird as my mom usually does lol.

That's funny, I went looking and almost thought they weren't there but they were way up in the neck area. My family never did anything with them so I'm not sure what I should do with them.
b00guy
My family never did anything with them either so I'm not sure.
snarkybitch
I use mine to make gravey (boil and sift)
Then the dogs get some nice treats
SuperfluousMeh
We only saved the neck for gravy. Hmm.

Someone watched Alton Brown's new video
ihaveamonsteraddiction
Brian Lagerstrom is where I got this from but you can't deny the appeal of the OG Good Eats dude.
sv1rr
I'm thawing mine outside... using Altons brine, though...
SuperfluousMeh
Oh gosh I didn't know there was a new video. But I did Loosely follow his brine.
xj4low
Only thing I would suggest in the future, is to bag the turkey and fill it with brine so it's not just hanging out in the cooler with ice. Makes cleanup after words easier. Enjoy a good juicy turkey.
zer0vector
Yeah he's doing new stuff, starting with the iconic turkey

He’s still the best. Thanks for sharing!

Perfectly timed, of course. Good for him, I was always a fan.
thebonesofmyancestors
Brine 'er up real good.
SuperfluousMeh
I almost didn't have enough to cover the back 😂
ProbablyCrazier
You need a weight regardless, the turkey will float in brine. I usually use a pie plate or something similar to rest on top of the bird and keep it submerged.
SuperfluousMeh
This was midway, he's covered up now. But I wanted a shot of him sitting pretty in his ice bath 😂
