Fully submerge that thing! Add some containers filled with water to take up the empty space and not dilute the brine. Then something to weigh it down to stay in the brine.

Okay so I’m gonna go out on a limb and say, good effort. A for the enthusiasm, but we need to level up fast. That bird needs to be in a bag. I dry brine poultry every day of the week. Way safer, way less mess, better results. No water log. Kenji (who is a bit smug) and meathead goldwin (amazingribs.com) have both talked about this. You’re messing with the culinary equivalent of antimatter. You need to spray everything with 10% bleach solution when you’re done. The water doesn’t make the bird/

and those aromatics won’t make a diff. It’s like brewing tea in ice water. I’ve done all of this and respect the hell out of the effort, but for all of my work these days I spatchcock and dry brine, then do a cook with a good digital probe that stays in the bird.

That's funny, I went looking and almost thought they weren't there but they were way up in the neck area. My family never did anything with them so I'm not sure what I should do with them.

Only thing I would suggest in the future, is to bag the turkey and fill it with brine so it's not just hanging out in the cooler with ice. Makes cleanup after words easier. Enjoy a good juicy turkey.

You need a weight regardless, the turkey will float in brine. I usually use a pie plate or something similar to rest on top of the bird and keep it submerged.
