I'm from the US. I've traveled to Europe enough to say you are probably right. I find that I align more with the European approach to life and this shows in conferences too.. DEFCON is fun. The new venue was a hit with people I've talked to. It's not unfriendly but certainly not as easy to have open discussions with strangers like BruCon.

For those that are light to moderately gluten intolerant (not celiac), you should be able to easily tolerate foods made with European wheat flour. It's not the same as US wheat flour. US wheat is a different plant that is hardier because of the sulphur content of US soil. EU wheat has far less gluten! Look for St Pierre brand bread or find a market that sells European flour and try it. Use it as you would US flour.
