As much as I normally dislike kale in most applications, it keeps its integrity and still stays crunchy while giving that earthy and bright taste
I will also add that I am from the south as well
I’m in a town that’s basically the edge of west coast/mid west and there is a bbq joint here that does one with kale, super thin and small pieces of green apple, finely diced Serrano, thin julienned carrots, and spiced crema (antithesis of traditional coleslaw), but smacks so hard with a slice of jalapeño cheddar venison sausage sandwiched in their green chile cornbread muffins. It’s not “traditional” bbq, but it’s a perfect example of SW fusion bbq being something amazing that shouldn’t work.
