Because I haven't even looked it up and already I have heard that pre pubescent kids get given hormone blockers instead of direct hormone treatment l, which stops permanent changes, but it's not in itself, harmful or irreversible to the child. Not to mention that changing later in life can make it more difficult for a trans person and the small percentage that regretted it had abusive transphobic parents.
I think this is more "People have a right to live as they want" said in a flippant way rather than "I have no empathy for others"
While gender identity is not the same as gender roles, the constant pressure for a person to have personality traits because of the set of genitals they have doesn't help the disphoria that's already there.

Depends on your exact definition of respect in this context, like I'd take it as "Not trying to change this person's mind because you like something different, and not to shit on this person for their tastes, or their tastes to their face". Now, if I want to shit on let's say, their musical taste IN PRIVATE, I think it's fine (as long as I don't lie to the person and say I do like it).
