Yea, I bought a scoring blade, but I think I’m just going back to the hardware store and am gonna use the box cutting razors. The scoring razors are too thin it seems. How do you feel about hydration levels? I feel like the high hydration stuff is a myth.

A shitload of salt and some sugar. Pink curing salt too if you want (I didn’t use any)
Hell yea glad you liked it. I should have made the tasso yesterday so I could cool it completely but man is it good stuff. Honestly a pretty straightforward thing to make if you know how to handle a smoker. I did this in my Weber grill.
I added some of the left over Tasso mix and some garlic powder to the pot. The Tasso itself is absolutely covered in spices too.

Yea, it ripped man. I ate too much lol
Hell yea, I want to add asparagus to my garden as soon as possible

I legit don’t mess with regular chicken salad without the grapes. Mandatory imo.
Yep. Made the chicken salad and pasta salad last night. Stuffed the sandwiches today and finished the pasta salad with fresh herbs this morning. Made the goat cheese dip today.
Add Calabrian chilies would make a legit play called eggs in hell. Ghost peppers would be Eggs in Total Obliteration
Leftover piece from a butcher block countertop remodel my mom did. Really nice finish on it.

Should have put in in the pan for a second but I put it in the toaster oven for before making. Pretty pale though.

These are pretty close to my preferred sweetness I think. Maybe I'd take em just a tad further ( I still have a bunch on the vine that are slightly less mature than these, I'll see where they end up.) A lot of grapes are just straight sugar bombs, and some tartness is preferable imo.
I've seen a few wasps around the yard, but nothing to be alarmed about. I have a largish creek behind my house so they could live there. No wasp nests at my house that I've seen.

I had a great recipe that I loved but I have since lost it. Regular ol' sweet baby ray's is the standard by which I judge other BBQ sauces though. It's the best off the shelf one out there.
I should make one too! I lost my recipe from back in the day, looking for a new one
