It is not so much a retcon, as there previously was VERY little material covering events betwen episodes 3 and 4 and 1/2
series about that, Rebels, which features a number of other Jedi survivors during the new Imperial order, Ahsoka being among them. 2/2
No, she never was killed by Vader. Obi and Yoda weren't the only survivors, there was a number of them, post Ep. 3. There is a whole 1/2
No, The Mandalorian is set post Episode 6. Imperial remnants and all that. Plus, Togruta (Ahsoka's species), have long lifespans by default.
