If you feel adventurous and not claustrophobic, the forbidden sections are really a treat. Just always go with someone who knows them, there are miles of galeries and rooms. But a lot of Parisian caves, especially south of the Seine still have access to them, plus some well known ones. Very much illegal and dangerous, but made my time in Paris special.
Dunno if @OP is on mastodon but it's become an accessibility best practice on there for people with impaired vision
